cheers to this juicy strawberry watermelon smoothie, packed with vitamin C and sunny vibes!

After months and months (and months!!!) of eating apples and bananas, I cannot tell you the almost ecstatic joy I feel eating strawberries. In all of their sweet and juicy glory, strawberries usher in an entire season of gorgeous, life-affirming fruit and so I feel like it is my duty to eat as much of it as humanly possible.

Fruit is already so perfect on its own; so how, you might ask, do you improve upon it’s awesomeness? Well, if you’re looking for comfort, you might want to dive into my incredible strawberry oat crumble bars. And, if you are looking for a juicy burst of energy, look no further than this incredible watermelon strawberry smoothie.

It doesn’t get simpler than this: in less than 5 minutes, you just pop strawberries, watermelon, almond milk – for a boost of plant-based calcium – and a squeeze of lime into the blender. Preferably with the tiniest pinch of salt. Yes, salt. No, your smoothie won’t taste salty…salt is the ultimate flavour enhancer so it simply allows the fruit to shine!

I love to serve this refreshing smoothie on a hot afternoon or to add a serving of fruit alongside my favourite overnight oats for breakfast…but you might note that I did not say for breakfast. I’ll put on my dietitian hat and remind you that smoothies without protein are a snack, not a meal! It’s a hot take but I want you nourished and thriving, okay?

Picture yourself on a sunny day, sipping this gorgeous smoothie with the sun warming your skin…or, use frozen fruit whenever you need an infusion of summer vibes even on the darkest, dreariest day. How to make this juicy watermelon strawberry smoothie

First, grab your ingredients: you can use either fresh or frozen strawberries and watermelon…fresh fruit creates a light and juicy smoothie. The more frozen fruit you use, the frostier this smoothie will be.

I like using almond milk here because it offers a boost of plant-based calcium (so few of us get enough!) without making the smoothie too creamy. I like this one FRESH! Then, for flavour, I like a tiny pinch of salt, a little squeeze of lime and if your fruit isn’t sweet enough, you might like a dash of maple syrup or other sweetener.

Then all you’ve got to do is blitz up the strawberries, watermelon, milk, lime and salt in a blender until smooth! These fruits are soft enough that you don’t even need a high-speed blender for this one.

Why this watermelon strawberry smoothie is so, so good for you

As far as nutrition goes, fruit is so underrated: I mean, it’s so juicy and delicious but/and/also absolutely packed with nutrition! Take strawberries for example: one cup of strawberries has 3 grams of fibre, plenty of heart healthy potassium, your entire daily requirement for vitamin C, tons of phytochemicals like polyphenols as well as small amounts of calcium, iron, and folate.

And watermelon? She’s no slouch either: even though watermelon is like 92% water, it still manages to pack an impressive amount of potassium, tons of the carotenoid lycopene as well as trace amounts of minerals like iron and citrulline, a unique amino acid with potential cardiovascular benefits.

If you’re thinking about blood sugars, know this…fruit consumption is actually associated with LOWER risk of type two diabetes (studies here and here). And for those of us with diabetes? Defer to your dietitian’s advice; if you’re advised to enjoy small amounts of fruit, sipping this after a balanced meal or as a snack alongside a source of protein, fibre and fat like a small handful of raw almonds or walnuts helps to mitigate blood sugar rise.
