Okay, I’m actually so excited for this one…because as a recipe developer, I’m always trying to create recipes YOU are excited to eat. And this comforting, vegan apple pie smoothie was requested just weeks ago (!) by one of our long time community members, Katie.

I worked HARD to create a smoothie that actually tastes like apple pie…it took me four attempts to get this one right, ha. It’s got sweet cinnamon and vanilla, date and applesauce to recreate that baked apple flavour and rolled oats to mimic the toasty pie crust.

It was so worth it. I’m like hundreds of recipes and three cookbooks in at this point, and I’ll never stop wanting to show you how magical healthy eating can be. Craveable. Energizing. And EASY!!!

And this smoothie is so, so good for your gut – dietitian moment! – it’s got 8 grams of fibre (11 if you use fresh apple) and plenty of soluble fibre that’s so soothing to the gut. The soluble pectin fibre in apples and beta-glucan in oats are even thought to be beneficial to the gut microbiome. 

A few kitchen notes to help you customize this comforting apple smoothie

You can use either unsweetened apple sauce or a fresh apple…I tested both versions. I think that applesauce creates a more true “apple pie” flavour but the apple version is delicious too..and higher in fibre!

Make it allergy friendly: there’s no yogurt or dairy in this smoothie…and if you need to, you can substitute sunbutter for almond butter!

So…I know you’re gonna ask: what’s the protein situation? I originally tested this smoothie with creamy soy milk, but it dulls the flavours. Almond milk really makes the taste POP, but it’s lower protein.

This smoothie will have 14g of protein if you use soy milk and 6g of protein if you use almond milk.

If you want, you can always boost the protein with a half scoop of vanilla protein powder OR add some hemp hearts! They have roughly 3.5g protein per tablespoon.

Equipment

  • High Speed Blender a bullet blender should do the job!

Ingredients

  • 1 cup unsweetened almond milk or soy milk for extra protein
  • ½ cup unsweetened applesauce or one apple (2-3 inch diameter)
  • 2 tablespoons rolled oats
  • 1 tablespoon almond butter
  • 1 pitted Medjool date you might like an extra if you use soy milk
  • ½ teaspoon vanilla
  • ½ teaspoon cinnamon
  • tiny pinch salt omit if using a fresh apple

Instructions

  • Place the almond milk, applesauce, rolled oats, almond butter, date, vanilla, cinnamon and salt in a blender and blend on high until smooth, 30-60 seconds. enjoy!

Notes

Note: if you use fresh apple, all that raw soluble fibre will lead to a bit of gelling in the smoothie (like blueberries!). So enjoy it immediately…or stick to applesauce if you need a smoothie that can sit in your cup for a while.
